It was a symphony of textures and flavours: the subtle sweetness of the octopus, the zesty tang of the citrus, and the fresh, peppery notes of microgreens. For our main, the Salt-Baked Sea Bass was an undeniable showstopper. Presented ceremoniously before being expertly filleted tableside, the fish emerged from its crust perfectly cooked – moist, flaky, and imbued with a delicate saline essence. It was accompanied by a selection of perfectly al dente spring vegetables: crisp asparagus, sweet broad beans, and baby carrots, all simply dressed to highlight their natural goodness. This dish exemplified the kitchen’s commitment to quality ingredients and precise execution, allowing the inherent beauty of the sea bass to be the star.

To conclude, we indulged in the Tarte Tropezienne Rivisitata. This modern take on the classic brioche-based cream tart was a delightful surprise. Instead of the traditional single, large tart, Riviera presented individual, elegantly deconstructed versions. A light, airy brioche base was topped with a cloud of vanilla bean cream, subtly enhanced with hints of orange blossom, and garnished with fresh berries and a delicate spun sugar flourish. It was a sophisticated and lighter interpretation that still captured the essence of the beloved dessert, providing a sweet and memorable finish to our meal.
